Still - Complex - Rich - Semi-dry

Inspiration:
Koji Rice Series 1 is the first release in a three-part collection, designed to showcase the beautiful complexities of koji fermentation. Deeply inspired by traditional fermentation techniques used in Japan, our team crafted this drink to highlight the unique character of koji rice and its earthy, herbaceous qualities. This expression was created to reflect the art of fermentation, and it serves as a tribute to the intricate processes behind this ancient craft.

Process:
The koji rice wine is infused with mahleb, a type of cherry pit known for its aromatic qualities, offering subtle notes of vanilla, cinnamon, and bitter almond. To further elevate the flavor profile, we layer in a cold-smoked lavender kefir, which is smoked over beechwood. The lavender kefir adds a touch of bitterness and a smoky complexity to the final blend, enhancing the earthy tones of the koji rice. This process results in a blend that is unfiltered and still, allowing the natural textures and flavors to shine.

Result:
The resulting drink is a unique and elegant blend that showcases the deep complexities of koji rice fermentation. The unfiltered nature of Koji Rice Series 1 provides a silky, luxurious mouthfeel, with a medium-dry body and warm, soothing undertones. The blend offers a balanced profile of sweet floral notes, earthy characteristics, and hints of warm spices from the mahleb and lavender kefir. The cold-smoked lavender lends a gentle bitterness, complementing the overall smoothness of the drink. This combination of flavors creates a refined, multi-layered drinking experience that is both comforting and intriguing.

Royaz Sparkling Nature 2020

The idea behind Moia / Royaz was to capture the pronounced strawberry aromatics of refošk (refosco) when the initial fermentation takes place in the bottle for our family and friends to enjoy over the year.

How? We carry out the secondary fermentation in an unconventional way – the base wine is bottled with new must which triggers the fermentation process in the bottle that is in front of you. The wine is not disgorged or filtered so all the lees is present in the bottle. You can drink it like this, is good and natural, or disgorge the bottle on your own. For “disgorgement at home” we advise to place the bottle upside down in a cool place a few hours before serving and disgorge in a bowl of water. We don’t take responsibility for dirty interiors and remember practice makes perfect.

ARENSBAK Rosé is created on a base of Wuniuzao Longjing green tea harvested at the foggy hilltops in China’s Zheijang province. The tea itself has delicate notes of flowers and dried grass that add finesse to the final ARENSBAK Rosé.

It’s made on a base of kombucha and in the second fermentation, elderberries, raspberries and hibiscus are added to give ARENSBAK Rosé its floral and sophisticated flavor. A hint of rose pepper adds to the characteristic scent. Before tapped, ARENSBAK Rosé is layered with oak to complement structure and tannins. Fizzy bubbles enhance the tasting experience.
